Forthave Nocino is made from hand foraged walnuts from New York’s beautiful Hudson Valley. We did a lower abv and lower sugar version. We it is also and longer process then is traditional. Instead of 3 months infusion and 3 months resting, we do about 9 months in each step. Also we did a distillation of the black walnuts to make a sort of walnut eau de vie which we folded into the infusion. It’s profile is a bit like the Burgundy of nocino, longer more delicate.”
